Should server location depend on the source of my traffic?
My clients are expecting most of their traffic to be coming from Greece. Is there an advantage to having their server in Greece?

Yes, the closer the resources, the better the performance for site visitors who are nearer to the server. This means either hosting in the country from where you expect the most traffic or else using a content delivery network (CDN) with resources in that country to provide service for best performance.
