Remove Expired Job Postings or Risk 'Spammy Schema Markup Penalty'
Google recently updated their job schema documentation to include a section covering job posting removal as seen below:
As you can see from the guidelines above, you have 4 ways to accomplish the removal of a job posting. None of them seem difficult. So, if you're using job schema to show job listings via Google Jobs in the search results, we recommend you heed Google's warning.
In spite of the likely enforceability issue, it isn't worth the risk of having your job markup, and possibly the rest of your schema, removed from the search results simply because you neglected to update your job postings. You can read Google's official announcement here.
